A little research, and it looks like this is how the APs do auto-meshing, so in theory, just disabling "Meshing" under each AP's settings in the Controller, and then under Settings > System > Advanced > Wireless Networking, disable the options for "Wireless Meshing" and "New WiFi Device Auto-Link", and the hidden SSID should disappear.

I set everything up years ago and pretty much just launched the controller every few months to update firmware or add a static route here or there. I reformatted my PC and just got done reinstalling the controller.

The UDM-Pro was shut down and the UDR took it's place for six weeks. The UDR internet speed was max 650 Mbps on a 1 Gbps connection, on WiFi I could reach 600 Mbps - when using the UDM-Pro and the same AP's I got WiFi 700 Mbps.
